Umami Burger’s Adam Fleischman is the mastermind behind the finga-lickin’ hybrid “Choco Chicken”, opening Downtown this month. Building a restaurant brand around such an unorthodox premise (chocolate v. chicken) may seem risky, but you can expect the forward-thinking Fleischman to make it work. This is a guy who truly obeys his palate, and is singularly obsessed with discovering and refining new tastes. Fleischman’s Umami Burger is legendary for hitting that tasty pleasure center, and I’d love to see lightning strike twice.
According to Fleischman, “You bite into it and it’s crazy juicy, not dried out. We have a brining process that we do for a day. The outside is really dark because of the chocolate.” I’m ready to have my mind blown (also offered are white-chocolate mashed potatoes, and that’s nothing to mess around with).
Busta Rhymes said it best: “Chickity Choco, the chocolate chicken. The rear, cock diesel, buttcheeks they were kickin’!” Could Busta-Bus have been rapping about chocolate-infused fried chicken?
